There are also red sauce tamales (which are medium spiced) and green sauce tamales (which are spicier). You can make cheese tamales, and fruit tamales are also popular.

Just like tamales, pozole is different depending on what area of the country you are visiting. You will find pozole with tons of spice, cilantro, rice, and even lime.
