If you were to travel throughout Mexico, you would discover that the taco takes many forms. We’ll start in central Mexico, where one of the most popular taco variations is the al pastor. An al pastor taco is a split-roasted taco with marinated pork and a hint of pineapple.

Aquascalientes, a small area of Mexico, has its signature tacos mineros, which are tacos made with pork, potatoes, and beans. Another tiny town in Mexico in Morelos, which crafts their own tacos acorazados. This translates to battleship tacos. These tacos consist of two tortillas filled with stew and rice. 

Moving on to Tlaxcala, Hidalgo, and Guanajuato, you can discover tacos de barbacoa, which are stewed in pulque. Tlaxcala and Hidalgo serve tacos de mixiote, which includes pit-barbecued meat and maguey worms, while Guanajuato enjoys a mild taco de nata made with a creamy, tomatoey chicken.

If you were to visit Puebla, you may find tacos de guisados, or stew tacos, as well as tacos de mole. Queretaro is known to serve up tacos de carnero or tacos de carnitas, also known as mutton tacos or deep-fried pork tacos. Yet another take on the taco can be found in San Luis Potosi. Here, tacos potosinos are popular. This adaptation includes pickled chillies, lettuce, cheese, carrot, and potato inside of a soft and spicy tortilla.
